What is gochujang?

Gochujang is a thick, red Korean chilli paste made from chilli powder, fermented soya beans, glutinous rice and salt. It is sweet, savoury and spicy all at once, and it gives Korean cooking its deep, warming heat.

What does it taste like?

Rich and savoury with a gentle sweetness and a slow, building heat. It is far deeper than a plain chilli sauce.

How to use it

Stir a spoonful into marinades, glazes, stews and dressings. It is strong, so start small and build up.

A substitute

There is no exact match, but a mix of miso, a little chilli paste and a pinch of sugar gets close in a pinch.
