Sriracha is a Thai style chilli and garlic sauce. It is smooth, slightly sweet and spicy, and it works on eggs, noodles, rice and burgers. Most UK shoppers buy it in a squeezy bottle.
Where to find it
Look in the world food aisle, near the other chilli sauces, or in the condiments aisle in some stores. Asian grocers carry a wider choice of bottles and sizes.
Thai style or American style
Thai style sriracha is medium heat, balanced and garlicky. American style bottles are hotter and sharper, with more vinegar. Pick the style that matches the heat you enjoy, and check the label to see which one you are buying.
What to check on the label
Look at the sugar level, since some bottles are much sweeter than others. Check the garlic level too, which varies more between brands than most people expect.
How to use it
Stir a spoonful into mayonnaise for a quick dip, or add it to a marinade for chicken. Use it at the end of cooking for the brightest flavour.
Storage
Keep the bottle in the fridge once opened, and check the label for storage advice.
