Sweet and sour sauce

Ingredients
  

  • 4 tbsp tomato ketchup
  • 150 ml pineapple juice
  • 3 tbsp rice vinegar, or white wine vinegar
  • 3 tbsp caster sugar
  • 1 tbsp light soy sauce
  • 1 clove garlic, finely grated
  • 1 tsp root ginger, finely grated
  • 1 tbsp cornflour
  • 2 tbsp cold water

Method
 

  1. Whisk the cornflour into the cold water in a small cup until no lumps are left. Set aside.
  2. Put the ketchup, pineapple juice, vinegar, sugar and soy sauce in a small saucepan. Stir over a medium heat until the sugar dissolves.
  3. Add the garlic and ginger. Bring to a gentle simmer and cook for 3 minutes so the raw vinegar edge cooks off.
  4. Stir the cornflour slurry again, then pour it into the pan in a thin stream while stirring.
  5. Simmer for 1 to 2 minutes until the sauce coats the back of a spoon. Take it off the heat straight away.
  6. Taste. Add a splash more vinegar if it is too sweet, or a teaspoon more sugar if it is too sharp.
