Method
- Whisk the cornflour into the cold water in a small cup until no lumps are left. Set aside.
- Put the ketchup, pineapple juice, vinegar, sugar and soy sauce in a small saucepan. Stir over a medium heat until the sugar dissolves.
- Add the garlic and ginger. Bring to a gentle simmer and cook for 3 minutes so the raw vinegar edge cooks off.
- Stir the cornflour slurry again, then pour it into the pan in a thin stream while stirring.
- Simmer for 1 to 2 minutes until the sauce coats the back of a spoon. Take it off the heat straight away.
- Taste. Add a splash more vinegar if it is too sweet, or a teaspoon more sugar if it is too sharp.
