Okonomiyaki

Servings: 2 pancakes

Ingredients
  

  • 200 g plain flour
  • 1 tsp baking powder
  • 200 ml water or dashi
  • 2 large eggs
  • 300 g white cabbage, finely shredded
  • 4 spring onions, sliced
  • 100 g streaky bacon or thin pork belly slices
  • 2 tbsp vegetable oil
  • okonomiyaki sauce, to serve
  • Kewpie mayonnaise, to serve
  • bonito flakes and aonori, to serve

Method
 

  1. Whisk the flour, baking powder and water or dashi into a smooth batter. Beat in the eggs.
  2. Fold the cabbage and spring onions through the batter.
  3. Heat the oil in a large frying pan. Pour in the batter and spread into a thick round.
  4. Lay the bacon or pork slices over the top. Cook for 5 to 6 minutes until the base is set.
  5. Flip carefully and cook for another 5 to 6 minutes, pressing down gently, until cooked through.
  6. Top with okonomiyaki sauce, mayonnaise, bonito flakes and aonori. Slice and serve.
