Best instant ramen: what to look for

Instant ramen covers everything from a 60p brick to a bag that costs more than a sandwich. What separates them is the noodle and the sachet count.

What makes a good instant ramen?

Look at how the noodles are made and how many sachets are in the packet. Air dried or non fried noodles have a firmer, less greasy bite than the standard fried block. Packets with three or more separate sachets, usually a soup base, an oil and a dried garnish, are built around a fuller broth.

The styles worth knowing

  • Japanese tonkotsu style. Rich pork broth, usually with a separate oil sachet. The closest to a restaurant bowl.
  • Korean spicy. Chewier noodles and serious heat. The category Shin Ramyun defined.
  • Malaysian and Singaporean laksa style. Coconut and curry base, often with a paste sachet.
  • Non fried, air dried. Lighter, firmer noodle. Usually the pricier bags.

What to look for on the packet

  • Non fried or air dried noodles, if you want a firmer bite
  • Three or more sachets, which usually means a better broth
  • Noodle weight above 100g per serving, or it will not fill you up
  • A paste sachet rather than powder alone, for more body

Brands you will actually find in the UK

Nissin and Samyang are stocked in most large supermarkets. Nongshim, the maker of Shin Ramyun, is widely available in Korean and Chinese grocers and online. Chinese supermarkets carry the widest range, including Japanese bags that rarely reach supermarket shelves.

How to make instant ramen better

Three additions do most of the work: an egg, something green and something sharp. None of them add more than two minutes.

  • A soft boiled egg, six and a half minutes from boiling
  • A handful of spinach or pak choi wilted into the broth in the last minute
  • A spoon of chilli oil or kimchi for acidity and heat
  • Spring onion, sliced thin, added off the heat

Frequently asked questions

Are the noodles fried?

Usually yes. Most instant noodle blocks are flash fried to dry them, which is what makes them cook in three minutes. Air dried versions exist and taste lighter.

Should I use all the seasoning?

Not always. Many packets are heavily salted. Start with two thirds of the sachet and add more if it needs it.

Can I cook it in the microwave?

Yes, in a deep bowl with plenty of water, but the noodles come out softer. A pan gives a better texture.

Is instant ramen the same as fresh ramen?

No. Fresh ramen uses a broth simmered for hours. Instant ramen is a different thing that happens to share a name, and it is worth judging on its own terms.
