Katsu curry sauce is a mild, smooth Japanese-style curry sauce, gently thickened and lightly sweet, usually poured over breaded chicken with rice. It is milder and sweeter than an Indian curry.
What it tastes like
Warm and mildly spiced, savoury with a touch of sweetness. Comforting rather than hot.
How it is made
Onion and garlic softened with mild curry powder, thickened with a little flour, loosened with stock, and often finished smooth. A little soy and honey round it off.
What to serve it with
Classically with breaded chicken katsu and rice, but it is just as good over tofu, vegetables or a simple bowl of rice.
